Abstract

Nano UFB Ice is ice produced from Nano UFB water where the dissolved oxygen (DO) is less than 1.0 mg/l. Using the experimental method to determine directly the DO index during ice production and measure indirectly the DO index of ice Nano UFB in ice forming tray. As results show that the factors affecting the DO index of Nano UFB ice are the production time and the corresponding ice center temperature. Nano UFB ice production time is 9 hours, corresponding to the ice center temperature is - 10⁰C that Nano UFB ice has a DO index < 1 mg/l and suitable for ice production technology characteristics of the testing facility. The DO index of Nano UFB ice is not significant difference between closed and open form. During ice production, Nano UFB water is reduced at 0⁰C temperature and forms Nano UFB ice starting has DO index below 1 mg/l and the quality criteria of ice Nano UFB is conformed according to QCVN 02: 2009/BYT on domestic water quality. The DO index of ice Nano UFB is about 20% compared to the control ice, TCVN 7325: 2016. Nano UFB ice and control ice have the same production time and ice center temperature.

Nước đá Nano UFB là nước đá được sản xuất từ nước Nano UFB ở đó hàm lượng ôxi hoà tan (DO) dưới 1,0 mg/l. Sử dụng phương pháp thực nghiệm đo trực tiếp chỉ số DO trong khi sản xuất nước đá và đo gián tiếp chỉ số DO của nước đá Nano UFB khi tan trong khay tạo đá. Kết quả nghiên cứu cho thấy, thời gian sản xuất nước đá Nano UFB 9 giờ, tương ứng với nhiệt độ tâm đá ở  - 10⁰C nhằm đảm bảo nước đá Nano UFB có chỉ số DO<1 mg/l và phù hợp với đặc điểm công nghệ sản xuất nước đá của cơ sở thử nghiệm. Chỉ số DO của nước đá Nano UFB không có sự sai khác giữa phương thức sản xuất ở dạng kín và dạng hở. Nước Nano UFB trong khi sản xuất nước đá Nano UFB hạ xuống nhiệt độ 0⁰C và bắt đầu kết tinh thành đá có chỉ số DO dưới 1,0 mg/l. Chất lượng của nước đá Nano UFB đảm bảo QCVN 02: 2009/BYT và chỉ số DO nước đá Nano UFB tan bằng khoảng 20% so với nước đá đối chứng, TCVN 7325: 2016. Nước đá Nano UFB và nước đá đối chứng có thời gian sản xuất, nhiệt độ tâm đá không khác nhau.
