Dehydration of honey is an essential step in the production and storage of honey in tropical countries in order to limit the rapid deterioration of quality caused by fermentation. JEVA technology is applied to dehydrate the coffee blossom honey (Dak Lak province, Vietnam) at moderate temperature and ambient pressure. This study analyzes changes in the physical and chemical characteristics of honey after dehydrated by JEVA technology. The results showed that after dehydration of the coffee blossom honey with JEVA technology, the water content was below 17% klg. Simultaneously, the HMF content increased slightly from 23.47 ± 0.21 to 25.63 ± 0. 25 mg/kg. In addition, the dehydration of honey allows 93.6% and 83.7% of polyphenol content and antioxidant activity to be retained. After 12 months of storage in a dark glass bottle, at a temperature of 17-32 °C and air humidity of 72-82%, dehydrated honey have an increase of 13.78% in the HMF content, and the total polyphenol content (TPC) was decreased by 47.83%; meanwhile, raw honey has the ratios of HMF and TPC up to 21.59% and 72.01%, respectively. The process of dehydrating honey with JEVA technology has a lower impact on honey quality compared to all other technologies, which have been applied for dehydration of honey.
