Abstract

In this article, we present the results of optimization on shark cartilage (Carcharhinus dussumieri) hydrolysis by a mixture of alcalase-papain enzyme. The our results show that the appropriate parameter range for shark cartilage hydrolysis by alcalase - papain enzyme mixture: suitable enzyme concentration range is 0.1% - 0.5%, the suitable temperature range is 40⁰C - 60⁰C and suitable time period is 16 - 24 hours. Optimization results have determined the optimal parameters for the shark cartilage hydrolysis by the alcalase - papain enzyme mixture: enzyme concentration is 0.3%, hydrolysis temperature is 50⁰C, and hydrolysis time is 20 hours. The results of shark cartilage hydrolysis with the above parameters obtained hydrolyzate with chondroitin sulphate collection efficiency of 96.97%.

Bài báo này trình bày kết quả nghiên cứu tối ưu hóa quá trình thủy phân sụn cá mập (Carcharhinus dussumieri) bằng hỗn hợp enzyme alcalase-papain. Kết quả nghiên cứu đã xác định được khoảng thông số biên thích hợp cho quá trình thủy phân sụn các mập bằng hỗn hợp enzyme alcalase - papain: khoảng nồng độ enzyme thích hợp là 0,1% - 0,5%, khoảng nhiệt độ thích hợp là 40⁰C - 60⁰C và khoảng thời gian thích hợp là 16 - 24 giờ. Kết quả tối ưu hóa đã xác định được các thông số tối ưu cho quá trình thủy phân sụn cá mập bằng hỗn hợp enzyme alcalase - papain: nồng độ enzyme là 0,3%, nhiệt độ thủy phân là 50⁰C và thời gian thủy phân là 20 giờ. Kết quả thủy phân sụn cá mập với các thông số ở trên thu được dịch thủy phân với hiệu suất thu chondroitin sulphate đạt 96,97%.
