Cayratia trifolia is a woody tree that grows wildly in grasslands and forests, along fences or in thickets in Vietnam and many countries around the world. It is a rich source of biologically active compounds that are useful for our health. Processed products from Cayratia trifolia include wine, cider, jam, and gummy candy. Although the processing technology for three-leaf cayratia gummy candy has been researched, there have been no surveys on changes in the quality in during storage. This study successfully investigated the ability to maintain the quality of the product by three types of packaging, including glass jars, zip bags, and plastic jars, as well as evaluated the impact of storage temperature conditions on changes in physicochemical, microbiological, and sensory parameters. The analysis results of this research showed that when stored in glass jars, the gummy candy best maintained their product characteristics. That means slow moisture loss, a more stable gel structure, a smaller increase in hardness, and maintenance of color and sensory quality. Furthermore, storing the product under cold storage conditions (4-10°C) significantly slowed down adverse physicochemical and sensory changes compared to storage at room temperature (28-32°C). After 60 days of storage in glass jars at cold temperatures (4-10 °C), the gummy candy had a moisture content of 35.17 ± 0.33%, a total acid content of 1.16 ± 0.00%, a vitamin C content of 14.80 ± 2.56 mg%, a total sugar content of 48.90 ± 0.00%, maintaining suitable sensory values and having a total microbial count of <10 CFU/g, meeting the requirements of Vietnamese standards. This is the first study on the storage of gummy candy from three-leaf cayratia (Cayratia trifolia L.).
