Brown rice is a nutritionally valuable raw material due to its high content of bioactive compounds with strong antioxidant activity, particularly anthocyanins and polyphenols found in pigmented rice varieties. The development of brown rice-based snack products using extrusion technology represents a promising approach to producing convenient foods with enhanced nutritional and sensory quality. This study aimed to evaluate the effects of brown rice variety (Soc Trang purple rice, black rice, and dark purple glutinous rice) and blending ratios with ST25 white rice (20/80, 30/70, and 40/60, w/w) on the quality attributes of extruded snacks. The evaluated parameters included moisture content, hardness, expansion ratio, bulk density, color characteristics (L*, a*, b*, and hue angle H°), antioxidant activity (DPPH radical scavenging activity), and sensory properties. The results indicated that rice variety strongly influenced on moisture content, color parameter b*, bulk density, and antioxidant capacity, whereas the blending ratio predominantly governed L*, a*, hardness, and expansion ratio of extruded snack. Increase of the proportion of brown rice in the formulation led to higher pre-drying moisture content, DPPH antioxidant activity, and expansion ratio, while post-drying moisture content, bulk density, hardness, and L* values tended to decrease. Among the investigated varieties, dark purple glutinous rice exhibited the highest antioxidant activity. Overall, the combination of ST25 rice with bioactive compound-rich brown rice varieties contributed to the production of extruded snacks with a crispy texture, natural color, and enhanced health benefits due to high antioxidant capacity (DPPH obtain 2.32 mg TE/g dry weigth) with expansion ratio of 1.68 times and hardness of 30.11 N, demonstrating strong potential for the development of nutritious rice-based snack products in Vietnam.

Gạo lứt là nguyên liệu giàu giá trị dinh dưỡng nhờ chứa nhiều hợp chất sinh học có hoạt tính kháng oxy hóa cao, đặc biệt là anthocyanin và polyphenol trong các giống gạo màu. Việc phát triển các sản phẩm snack từ gạo lứt thông qua công nghệ ép đùn là một hướng đi tiềm năng nhằm tạo ra thực phẩm tiện lợi có giá trị dinh dưỡng và cảm quan cao. Mục tiêu của nghiên cứu này là đánh giá ảnh hưởng của giống gạo lứt (gạo tím Sóc Trăng, gạo đen và gạo nếp tím than) và tỷ lệ phối trộn với gạo trắng ST25 (20/80, 30/70 và 40/60, khối lượng/khối lượng) đến các đặc tính chất lượng của snack ép đùn. Các chỉ tiêu được khảo sát bao gồm độ ẩm, độ cứng, độ nở, khối lượng riêng, màu sắc (L*, a*, b* và góc màu Ho), hoạt tính kháng oxy hóa (DPPH) và giá trị cảm quan. Kết quả cho thấy, khi giống gạo có ảnh hưởng rõ rệt đến hàm lượng ẩm, giá trị màu b*, khối lượng riêng và khả năng kháng oxy hóa, trong khi tỷ lệ phối trộn chi phối chủ yếu đến L*, a*, độ cứng và độ nở của snack ép đùn. Việc tăng tỷ lệ gạo lứt trong công thức, các mẫu snack có xu hướng tăng độ ẩm trước sấy, hoạt tính kháng oxy hóa DPPH và độ nở, trong khi độ ẩm sau sấy, khối lượng riêng, độ cứng và giá trị L* có xu hướng giảm. Trong số các giống được khảo sát, gạo nếp tím than cho hoạt tính kháng oxy hóa cao nhất. Nhìn chung, sự kết hợp giữa gạo ST25 và các giống gạo lứt giàu hợp chất sinh học đã góp phần tạo ra sản phẩm snack giòn xốp, màu sắc tự nhiên và giá trị sức khỏe vượt trội với khả năng chống oxy hóa cao (DPPH đạt 2,32 mg TE/g CK) với độ nở 1,68 lần và độ cứng 30,11 N, cho thấy tiềm năng ứng dụng trong phát triển các sản phẩm snack dinh dưỡng từ gạo tại Việt Nam.
